Deli Farm Charcuterie is a rapidly expanding new venture close to the rugged North Cornish Coastline making traditionally air dried Salami and Ham.
Our products are carefully hand crafted combining traditional methods with modern technology to create perfect climatic conditions for drying and maturing. All our meats are sourced from selected Cornish producers; this is mixed with freshly ground herbs and spices to produce a variety of flavours and textures and stuffed in natural casings. Traditionally air dried products have a long shelf life; and like a good wine the flavour improves with time!
I too loved their low fat olive salami. It does sound a bit weird - especially the thought of low fat salami in the first place, as fat is such a vital part of making salami - but it really is very good. Has a slightly different texture to normal salami, but the flavour is excellent - and you don't taste the olives, they just add saltiness and moisture.
I tried their salami at Truro farmers market, delicious, especially the low fat olive ones.... Mail order available. Well worth a taste of these award winning delicacies.
