The first written records of Cider Brandy go back to 1678. Recently, however, there has been a revival of interest, led principally by the Somerset Cider Brandy Company, which in 1989 was granted by HM Customs the first full cider distilling licence in recorded history.

These folks make Burrow Hill Cider, which is my favourite cider, and the apple brandy is excellent too. They do 3, 5 and 10 year old brandies, but to be honest my favourites are the 3 and 5 year olds, as they are the most "apply". The 10 year old is very smooth, but loses much of the apply character. For cooking (especially to make practically any apple-based dish come alive), use the 3 year old.
