We use an organic abattoir and hang on the bone for anything betwen 4 and 6 weeks.

I had a wing rib the other day, havent eaten beef like it, very tender, great marbeling, its really exciting getting the oportunity to try all these old breeds, longhorn is my favourite so far closely followed by dexter.
